Regarding the growing region, their sole focus is to make every cup of Alishan coffee perfectly.

Zhuangxuan Wizard Coffee Estate, located in the Dabang Tribe of Alishan, has recently gained attention in Chiayi’s specialty coffee scene as a local estate. The farm sits in a high-altitude mountainous area with abundant mist and large temperature differences between day and night. These climatic conditions allow the coffee trees to naturally develop clean and vibrant fruity aromas.

In the early days, although there were scattered coffee trees in the tribe, there was no systematic cultivation. Only in recent years has the estate owner fully invested in coffee planting, processing, and flavor management, officially stepping onto the path of specialty coffee.

 

At the beginning, Zhuangxuan Wizard had no complete coffee techniques nor any reference models from other regions. They had to explore planting, harvesting, and processing equipment on their own. To improve quality, they consulted various experts and estates, gathered processing information from many places, repeatedly adjusted data on washed, honey, and natural processing, recorded every failure and made improvements, using more precise temperature, moisture, and fermentation control.

 

These accumulated efforts have allowed the estate’s beans to consistently exhibit stable and delicate flavors. For Zhuangxuan Wizard, coffee is not just a product, but the result of the land, culture, and accumulated techniques. They hope that through a cup of coffee, more people can understand the unique aroma of the Alishan tribal terroir.

産地に対しては、阿里山の一杯一杯のコーヒーを丁寧に作ることだけを考えています。

樁萱巫師コーヒー農園は阿里山の達邦部落に位置し、近年嘉義のスペシャルティコーヒー界で注目されている地元の農園です。農園は標高が高く、霧が多く、昼夜の気温差が大きい山間部にあり、この気候条件がコーヒーの木に自然でクリアかつ鮮やかな果実の香りを育んでいます。

以前は部落内に点在するコーヒーの木があったものの、体系的な栽培には至っていませんでした。しかし近年になって農園主がコーヒーの栽培、後処理、風味管理に全面的に取り組み、正式にスペシャルティコーヒーの道を歩み始めました。樁萱巫師は当初、完全なコーヒー技術も参考にできる産地のモデルもありませんでした。栽培、収穫、後処理の設備も全て自ら試行錯誤で開発しました。

品質向上のために、様々な専門家や農園に相談し、各地から処理方法の情報を集めては、ウォッシュド、ハニー、ナチュラルのデータを何度も調整し、失敗を記録して改良。温度、水分、発酵の管理をより精密に行いました。これらの積み重ねにより、農園の豆は安定した繊細な風味を発揮し始めています。

 

樁萱巫師にとってコーヒーは単なる商品ではなく、土地、文化、技術の積み重ねの成果です。彼らは一杯のコーヒーを通して、より多くの人に阿里山部落の風土の香りを理解してもらいたいと願っています。
